Ravioli
w/Arugula
Ingredients
1 package cheese or mushroom ravioli – prepared
according to package directions
1 large shallot – minced
3 cloves fresh garlic – minced
2 tablespoons hazelnut oil
½ cup fresh arugula, rinsed – chiffonade
1 tablespoon unsalted butter
1 tablespoon fresh lemon zest
Salt/pepper to taste

Prepare ravioli according to package directions

Meanwhile~heat hazelnut oil in medium to large skillet
over medium heat

Add minced shallot and garlic to skillet, sauté until
fragrant
4)
Stir in cooked ravioli
5)
Add butter and arugula – stir until butter is melted
and ravioli is well coated and arugula is wilted
6)
Season to taste with salt and pepper
7)
Serve on individual serving plates – garnish each
evenly with lemon zest
Serves 4-6
